- 2 lbs ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup beef broth
- Optional toppings: shredded cheese, sour cream, chopped green onions
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add the diced onion, garlic, and bell pepper to the pot. Cook until the vegetables are soft and fragrant, about 5-7 minutes.
- Stir in the chili powder, cumin, paprika, salt, and pepper, letting the spices toast for a minute. Then, add the kidney beans, diced tomatoes, and beef broth. Bring the mixture to a simmer and cook covered for at least 30 minutes, stirring occasionally.
- Adjust seasoning if needed, then serve hot with optional toppings.
