Ingredients

  • 2 lbs ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup beef broth
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add the diced onion, garlic, and bell pepper to the pot. Cook until the vegetables are soft and fragrant, about 5-7 minutes.
  3. Stir in the chili powder, cumin, paprika, salt, and pepper, letting the spices toast for a minute. Then, add the kidney beans, diced tomatoes, and beef broth. Bring the mixture to a simmer and cook covered for at least 30 minutes, stirring occasionally.
  4. Adjust seasoning if needed, then serve hot with optional toppings.
