- 4 ounces semi-sweet chocolate, chopped
- 4 ounces white chocolate, chopped
- 4 ounces milk chocolate, chopped
- 1 1/2 cups heavy cream
- 3 large eggs, separated
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon gelatin
- 1/4 cup water
Instructions
- Melt each type of chocolate in separate bowls over a double boiler until fully melted and smooth.
- In a bowl, whip 1 cup of heavy cream until soft peaks form.
- Beat the egg yolks and granulated sugar until pale and creamy.
- Add the melted chocolate to the egg mixture and blend smoothly, then fold in the whipped cream. Repeat for each type of chocolate.
- Dissolve the gelatin in water and add it to each chocolate mixture.
- In a springform pan, layer the dark chocolate mousse first, followed by the milk chocolate, and finally top with the white chocolate mousse.
- Chill the cake in the refrigerator for at least 4 hours or until set.
- Remove the springform pan and slice the cake, serving chilled.
Notes
Store leftover mousse cake in an airtight container in the refrigerator for up to 3 days. Avoid freezing.
