Ingredients

- 2 cups rolled oats
- 1 cup mixed nuts (e.g., almonds, walnuts, cashews)
- 1/2 cup honey or maple syrup
- 1/2 cup nut butter (e.g., almond butter, peanut butter)
- 1/2 cup dried fruits (e.g., cranberries, raisins, apricots)
- 1/4 cup chocolate chips (optional)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking dish (about 8×8 inches) with parchment paper.
- In a large bowl, combine the rolled oats, mixed nuts, salt, and dried fruits. Add chocolate chips if using.
- In a small saucepan, heat the honey (or maple syrup) and nut butter over medium heat until melted and smooth. Remove from heat and stir in the vanilla extract. Pour over the dry ingredients and mix until evenly coated.
- Press the mixture firmly into the baking dish and bake for 20-25 minutes until golden brown. Let cool completely, then lift out using parchment paper and cut into bars.
Notes
Store in an airtight container at room temperature for up to a week or refrigerate for up to two weeks. For longer storage, freeze for up to three months.
