A delightful chocolate cake inspired by ‘Matilda’ with a rich, moist texture and heavenly flavor.
Ingredients

- 1 and 3/4 cups all-purpose flour
- 1 and 1/2 teaspoons baking powder
- 1 and 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large bowl, sift together the flour, baking powder, baking soda, salt, and cocoa powder.
- In another bowl, mix together the sugar, milk, vegetable oil, eggs, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture and mix until smooth.
- Stir in the boiling water (the batter will be thin).
- Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes, or until a toothpick comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then remove from pans and cool completely on a wire rack.
- Frost with your favorite chocolate frosting and enjoy!
Notes
For a richer flavor use dark cocoa powder. Store in an airtight container for up to 3 days at room temperature or refrigerate for up to a week.
