Description

A delightful chocolate cake inspired by ‘Matilda’ with a rich, moist texture and heavenly flavor.


Ingredients

  • 1 and 3/4 cups all-purpose flour
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together the flour, baking powder, baking soda, salt, and cocoa powder.
  3. In another bowl, mix together the sugar, milk, vegetable oil, eggs, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet mixture and mix until smooth.
  5. Stir in the boiling water (the batter will be thin).
  6. Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes, or until a toothpick comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then remove from pans and cool completely on a wire rack.
  8. Frost with your favorite chocolate frosting and enjoy!

Notes

For a richer flavor use dark cocoa powder. Store in an airtight container for up to 3 days at room temperature or refrigerate for up to a week.
