- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper or a silicone baking mat.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just blended. Fold in the grated carrots and any optional ingredients.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them a couple of inches apart.
- Bake for 12-15 minutes or until the edges start to turn golden brown.
- Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra chewiness, add a tablespoon of molasses to the wet ingredients. Store in an airtight container for up to a week or freeze for up to three months.
