Description

Delightful cookies capturing the essence of classic carrot cake, soft and chewy with warm spices and optional add-ins.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just blended. Fold in the grated carrots and any optional ingredients.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them a couple of inches apart.
  6. Bake for 12-15 minutes or until the edges start to turn golden brown.
  7. Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra chewiness, add a tablespoon of molasses to the wet ingredients. Store in an airtight container for up to a week or freeze for up to three months.
