Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • Fresh basil leaves for garnish
  • Cooked rice for serving

Instructions

  1. In a large skillet, heat a bit of oil over medium heat. Add the sliced onion and cook until translucent.
  2. Stir in the minced garlic and grated ginger and cook for another minute.
  3. Add the chicken pieces to the skillet and cook until browned on all sides, then stir in the red curry paste.
  4. Pour in the coconut milk, fish sauce, and sugar, stirring to combine. Add the bell pepper and broccoli, and let simmer for 10-15 minutes until fully cooked.
  5. Serve over cooked rice, garnishing with fresh basil leaves.

Adjust the spice levels to your liking and feel free to substitute chicken with tofu or shrimp for variations.
