- 1 cup buttermilk
- 1 cup cornmeal

Instructions
- Slice the onions into rings, about a quarter-inch thick.
- Soak the onion rings in buttermilk for at least 30 minutes.
- In a separate bowl, mix the cornmeal, salt, and black pepper.
- Heat oil in a skillet over medium heat.
- Dredge each onion ring in the cornmeal mixture, coating well.
- Fry the onion rings in the hot oil until golden brown, about 3-4 minutes on each side.
- Drain the fried onion rings on paper towels and serve hot.
Notes
For extra crunch, consider double-dipping in buttermilk and cornmeal.
