- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- Zest of 1 lemon
- 1 cup fresh blueberries
- Maple syrup (for serving)
Instructions
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, egg, melted butter, and lemon zest. Mix well until fully blended.
- Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined; fold in the fresh blueberries.
- Preheat a skillet over medium heat and lightly grease it. Pour tablespoon-sized amounts of the pancake batter onto the skillet.
- Cook for about 2-3 minutes, or until bubbles form on the surface. Flip and cook for another 1-2 minutes until golden brown.
- Remove from the skillet and serve warm, drizzled with maple syrup.
Notes
Use fresh blueberries for the best flavor. You can also freeze leftovers; just layer them with parchment paper and reheat as needed.
