Description

Sweet, fluffy, and zesty pancake bites filled with vibrant blueberries and a refreshing hint of lemon.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Zest of 1 lemon
  • 1 cup fresh blueberries
  • Maple syrup (for serving)

Instructions

  1. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, combine the milk, egg, melted butter, and lemon zest. Mix well until fully blended.
  3. Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined; fold in the fresh blueberries.
  4. Preheat a skillet over medium heat and lightly grease it. Pour tablespoon-sized amounts of the pancake batter onto the skillet.
  5. Cook for about 2-3 minutes, or until bubbles form on the surface. Flip and cook for another 1-2 minutes until golden brown.
  6. Remove from the skillet and serve warm, drizzled with maple syrup.

Notes

Use fresh blueberries for the best flavor. You can also freeze leftovers; just layer them with parchment paper and reheat as needed.
