- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 1 cup salsa
- 6 corn tortillas, cut into quarters
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 small onion, diced
- Optional toppings: sour cream, avocado, cilantro
Instructions
- Preheat the oven to 350°F (175°C). Gather your ingredients and prepare your baking dish by spraying it lightly with cooking spray.
- In a large skillet, cook the ground beef along with the diced onion over medium heat until the beef is browned. Drain excess fat.
- Add the black beans, corn, taco seasoning, and salsa to the skillet. Stir everything together until well combined and heated through, about 5 minutes.
- In the prepared baking dish, layer half of the tortilla quarters on the bottom. Add half of the beef mixture followed by half of the cheese. Repeat layers, finishing with the rest of the cheese on top. Bake for 25-30 minutes or until the cheese is melted and bubbly. Serve hot.
