Delightful Swirled Lemon Cheesecake Bars combine creamy cheesecake and refreshing lemon, perfect for warm weather or special occasions.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a 9×9-inch baking dish.
  2. In a mixing bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the baking dish to form a crust.
  3. Beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, then mix in lemon juice, lemon zest, and vanilla until combined.
  4. Pour the cheesecake filling over the crust and create swirls with a knife. Bake for 25-30 minutes until the center is just set. Allow cooling at room temperature.
  5. Chill for at least 4 hours before cutting into squares.
