Description

A warm and comforting sweet potato soup with a creamy texture and aromatic spices, perfect for any season.


Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground ginger
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: heavy cream or coconut milk for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion turns translucent, about 5 minutes.
  2. Add the diced sweet potatoes along with ground ginger and cumin. Stir well to combine.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20-25 minutes, or until sweet potatoes are tender.
  4. Use an immersion blender to puree the soup until smooth. If needed, transfer in batches to a blender.
  5. Return the soup to the pot and season with salt and pepper to taste. Drizzle with heavy cream or coconut milk before serving.

Notes

For extra flavor, sauté onions and garlic until lightly browned. Feel free to experiment with spices like nutmeg or coriander.
