Description

A delightful, creamy dessert that satisfies chocolate cravings without the added sugar.


Ingredients

  • 2 cups unsweetened almond milk
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup sugar substitute (like stevia or erythritol)
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a saucepan, whisk together the almond milk, cocoa powder, sugar substitute, cornstarch, and salt.
  2. Heat over medium heat while whisking constantly until the mixture thickens and starts to bubble.
  3. Once thickened, remove from heat and stir in the vanilla extract.
  4. Pour the pudding into serving bowls and refrigerate until set, about 2 hours.

Notes

Serve chilled, topped with whipped coconut cream, fresh berries, or nuts. Store in an airtight container in the fridge for up to 3 days.
