Description

Colorful bell peppers filled with a savory mixture of ground meat, rice, and tomatoes, perfect for family dinners and meal prep.


Ingredients

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 pound ground beef or turkey
  • 1 can (15 ounces) diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  2. In a skillet over medium heat, cook the chopped onion and minced garlic until soft, about 3-5 minutes.
  3. Add the ground beef or turkey to the skillet and cook until browned. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  4. Stuff each bell pepper with the mixture. Place upright in a baking dish and cover with foil.
  5. Bake for 25 minutes. Remove the foil, add cheese if desired, and bake for an additional 10 minutes.

Notes

Don’t overcook the peppers. Adjust seasoning to taste. Leftovers can be stored for up to three days.
