Description

Delightful and nutritious muffins packed with protein and the sweetness of fresh strawberries, perfect for breakfast or a snack.


Ingredients

  • 2 cups whole wheat flour
  • 1 scoop protein powder
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup honey or maple syrup
  • 1 cup milk (dairy or plant-based)
  • 1/2 cup Greek yogurt or applesauce
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chopped fresh strawberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the whole wheat flour, protein powder, baking powder, baking soda, and salt in a large bowl.
  3. Whisk together the honey or maple syrup, milk, Greek yogurt or applesauce, egg, and vanilla extract in another bowl.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the chopped strawberries.
  5. Divide the batter evenly among the muffin cups. Bake for 18-20 minutes or until a toothpick comes out clean.
  6. Let the muffins cool for a few minutes in the tin before transferring them to a wire rack.

Notes

Enjoy warm or store in an airtight container. They can also be frozen for up to 2 months.
