Ingredients

- 2 cups whole wheat flour
- 1 scoop protein powder
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup honey or maple syrup
- 1 cup milk (dairy or plant-based)
- 1/2 cup Greek yogurt or applesauce
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chopped fresh strawberries
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix together the whole wheat flour, protein powder, baking powder, baking soda, and salt in a large bowl.
- Whisk together the honey or maple syrup, milk, Greek yogurt or applesauce, egg, and vanilla extract in another bowl.
- Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the chopped strawberries.
- Divide the batter evenly among the muffin cups. Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the muffins cool for a few minutes in the tin before transferring them to a wire rack.
Notes
Enjoy warm or store in an airtight container. They can also be frozen for up to 2 months.
