A creamy and sweet cheesecake layered with fresh strawberries and a buttery graham cracker crust, perfect for any celebration.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 cups strawberries, diced
- ½ cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C). In a medium bowl, mix graham cracker crumbs with melted butter and press into the bottom of a 9-inch springform pan. Bake for 10 minutes and cool completely.
- In a large bowl, beat together softened cream cheese and granulated sugar until smooth. Add vanilla and mix until combined.
- In another bowl, whip heavy whipping cream until stiff peaks form. Gently fold into the cream cheese mixture.
- Spread half of the creamy mixture over the cooled crust. Layer half of the diced strawberries on top, then add the remaining cream cheese mixture. Top with the rest of the strawberries and sprinkle with powdered sugar. Refrigerate for at least 4 hours, or until set. Serve chilled.
Notes
Let the cheesecake sit at room temperature for 10 minutes before slicing for easier cuts. Can be made a day in advance.
