Ingredients

- 1 cup fresh strawberries, hulled and chopped
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup powdered sugar (for dusting, optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
- In another bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, mixing until just combined.
- Fold in the chopped strawberries gently.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper. Bake for 12-15 minutes or until the edges are lightly golden.
- Let the cookies cool for a few minutes on the baking sheet before transferring them to a wire rack. Dust with powdered sugar if desired.
