Description

Soft and chewy cookies infused with fresh strawberries, perfect for any occasion.


Ingredients

  • 1 cup fresh strawberries, hulled and chopped
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar (for dusting, optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
  3. In another bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, mixing until just combined.
  4. Fold in the chopped strawberries gently.
  5. Drop spoonfuls of dough onto a baking sheet lined with parchment paper. Bake for 12-15 minutes or until the edges are lightly golden.
  6. Let the cookies cool for a few minutes on the baking sheet before transferring them to a wire rack. Dust with powdered sugar if desired.

Notes

Store in an airtight container at room temperature for up to three days or refrigerate for a week.
