- 4 chicken breasts, boneless and skinless
- 1 cup (150 g) sliced, hulled strawberries
- 120 ml balsamic vinegar
- 2 tablespoons (30 ml) honey
- 1 tablespoon (15 ml) olive oil
- 1 teaspoon (3 g) garlic powder
- Salt, as needed
- Black pepper, as needed
- Basil leaves, fresh for topping
Instructions
- Mix the balsamic vinegar, honey, olive oil, garlic powder, salt, and black pepper in a bowl. Toss in the chicken breasts, ensuring they are thoroughly coated. Cover the bowl and place it in the fridge to marinate for at least 30 minutes.
- Preheat your grill or stovetop grill pan to medium-high heat.
- Remove the chicken breasts from the marinade, allowing the excess liquid to drip off. Reserve the marinade for later use. Grill the chicken for about 6-7 minutes on each side or until the internal temperature reaches 75°C (165°F).
- While the chicken cooks, pour the reserved marinade into a small pot and add the sliced strawberries. Bring it to a gentle simmer over medium heat, cooking for 5-7 minutes until the mixture thickens and the strawberries become soft.
Notes
For a spice kick, add a pinch of red pepper flakes to the marinade. You can marinate the chicken a day in advance.
