Description

A delightful dish that combines the sweetness of strawberries with a tangy balsamic glaze over juicy grilled chicken.


Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1 cup (150 g) sliced, hulled strawberries
  • 120 ml balsamic vinegar
  • 2 tablespoons (30 ml) honey
  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon (3 g) garlic powder
  • Salt, as needed
  • Black pepper, as needed
  • Basil leaves, fresh for topping

Instructions

  1. Mix the balsamic vinegar, honey, olive oil, garlic powder, salt, and black pepper in a bowl. Toss in the chicken breasts, ensuring they are thoroughly coated. Cover the bowl and place it in the fridge to marinate for at least 30 minutes.
  2. Preheat your grill or stovetop grill pan to medium-high heat.
  3. Remove the chicken breasts from the marinade, allowing the excess liquid to drip off. Reserve the marinade for later use. Grill the chicken for about 6-7 minutes on each side or until the internal temperature reaches 75°C (165°F).
  4. While the chicken cooks, pour the reserved marinade into a small pot and add the sliced strawberries. Bring it to a gentle simmer over medium heat, cooking for 5-7 minutes until the mixture thickens and the strawberries become soft.

Notes

For a spice kick, add a pinch of red pepper flakes to the marinade. You can marinate the chicken a day in advance.
