- 1 box strawberry cake mix
- 3 eggs (for the cake)
- 1/2 cup vegetable oil
- 1 cup water
- 16 oz cream cheese
- 1/2 cup granulated sugar (for the filling)
- 2 eggs (for the filling)
- 1 tsp vanilla extract
- 20 Golden Oreos
- 1 cup freeze-dried strawberries
- 1/4 cup melted butter
Instructions
- Preheat the oven to 350°F (175°C). Prepare the strawberry cake mix according to the package directions.
- Divide the batter evenly between two 8-inch round cake pans and bake until a toothpick comes out clean, about 25-30 minutes.
- Cool the cakes in the pans for 10 minutes, then transfer them to a wire rack.
- In a bowl, beat the cream cheese and granulated sugar until smooth. Add eggs and vanilla extract, blending until combined.
- Pour the cream cheese mixture into a 9-inch springform pan and bake in a water bath at 325°F (163°C) for 40-50 minutes.
- Let the cheesecake cool completely, then refrigerate until chilled.
- Crush the Golden Oreos in a food processor, then mix with freeze-dried strawberries and melted butter for the crunchy topping.
- Layer the cake by placing one strawberry cake layer on a serving plate, spreading the cheesecake on top, and adding the second cake layer.
- Lightly frost the sides and top with any extra frosting, then press the crunch topping around the cake. Chill for at least 1 hour before serving.
- Slice and serve chilled, optionally garnished with fresh strawberries or whipped cream.
