A delightful twist on traditional banana bread, infused with fresh strawberries for a moist and flavorful loaf.

- 1/2 cup butter, softened
- 1 cup white sugar
- 2 eggs
- 4 tbsp sour cream
- 1 medium-large banana, mashed well
- 3 oz box of strawberry Jell-O mix
- 1/2 lb strawberries, stems removed and chopped
- 1 3/4 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/8 tsp baking soda
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan well.
- Mash the banana until smooth. Puree the chopped strawberries with the Jell-O mix until smooth, then pour into the banana mixture and stir.
- Cream butter and sugar together until light and fluffy.
- Add eggs one at a time, mixing well after each. Then, stir in sour cream until combined.
- Whisk flour, baking powder, salt, and baking soda together. Gradually add to wet ingredients, mixing on low until incorporated.
- Pour the strawberry-banana mixture into the batter, and mix on low until just combined.
- Pour batter into the prepared pan. Bake for 55-65 minutes or until a toothpick comes out clean. Cool in pan for 10 minutes before transferring to a wire rack.
Notes
For best results, use ripe bananas and fresh strawberries. Don’t overmix to prevent dense bread. Consider adding nuts for texture.
