Description

A delightful twist on traditional banana bread, infused with fresh strawberries for a moist and flavorful loaf.


Ingredients

  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 2 eggs
  • 4 tbsp sour cream
  • 1 medium-large banana, mashed well
  • 3 oz box of strawberry Jell-O mix
  • 1/2 lb strawberries, stems removed and chopped
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/8 tsp baking soda

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan well.
  2. Mash the banana until smooth. Puree the chopped strawberries with the Jell-O mix until smooth, then pour into the banana mixture and stir.
  3. Cream butter and sugar together until light and fluffy.
  4. Add eggs one at a time, mixing well after each. Then, stir in sour cream until combined.
  5. Whisk flour, baking powder, salt, and baking soda together. Gradually add to wet ingredients, mixing on low until incorporated.
  6. Pour the strawberry-banana mixture into the batter, and mix on low until just combined.
  7. Pour batter into the prepared pan. Bake for 55-65 minutes or until a toothpick comes out clean. Cool in pan for 10 minutes before transferring to a wire rack.

Notes

For best results, use ripe bananas and fresh strawberries. Don’t overmix to prevent dense bread. Consider adding nuts for texture.
