Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup pureed fresh strawberries
  • 2 tablespoons sugar (for strawberries)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter; press into a 9-inch springform pan.
  3. Beat cream cheese until smooth, add 1 cup sugar, vanilla, and eggs one at a time, beat well; mix in sour cream.
  4. Pour half of the cheesecake batter into the crust, swirl in strawberry puree with 2 tablespoons sugar, and pour over the first layer.
  5. Bake for 50-60 minutes until the center is set, cool, then refrigerate for at least 4 hours before serving.

Notes

For best results, make sure cream cheese is at room temperature and avoid overmixing after adding eggs. Store leftovers in the refrigerator for up to 5 days or freeze for longer storage.
