Description

  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup vegetable broth
  • 1/4 cup heavy cream (or coconut milk for a vegan option)
  • Salt and pepper to taste
  • Juice of 1/2 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add minced garlic and optional red pepper flakes. Sauté for about 1 minute until fragrant.
  2. Add chopped spinach and cook for 2-3 minutes until wilted, stirring occasionally.
  3. Stir in white beans and vegetable broth, bringing to a gentle simmer. Cook for about 5 minutes.
  4. Reduce heat to low, stir in heavy cream (or coconut milk), season with salt, pepper, and lemon juice. Cook for an additional 2-3 minutes until heated through. Garnish with parsley before serving.

Notes

For a lighter option, substitute heavy cream with coconut milk. Use fresh spinach for best flavor.
