  • 1 tablespoon olive oil
  • 1 pound Italian sausage
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, roughly chopped
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Red pepper flakes, to taste

Instructions

  1. Cook gnocchi according to package instructions, typically boiling until they float, about 2-3 minutes. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add Italian sausage, breaking it up and cooking for 5-7 minutes until browned.
  3. Add minced garlic to the skillet and cook for 1 minute until fragrant, then stir in chopped spinach and cook until wilted, about 2 minutes.
  4. Pour in heavy cream, bring to a simmer, and add cooked gnocchi and grated Parmesan. Stir to combine and season with salt, pepper, and red pepper flakes. Serve warm, garnished with more Parmesan if desired.

Notes

For a lighter dish, substitute Italian sausage with turkey or chicken sausage. You can also add other vegetables like mushrooms or bell peppers.
