- 4 large potatoes
- 2 tablespoons olive oil

- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 cup tomato sauce
- 1 clove garlic, minced
- 1 tablespoon vinegar
- Fresh parsley for garnish
Instructions
- Peel and cut the potatoes into bite-sized cubes.
- Boil the potatoes in salted water until tender, about 10 minutes.
- Drain and let the potatoes cool completely.
- Heat olive oil in a frying pan over medium heat. Add the potatoes and fry until golden and crispy.
- In another pan, sauté garlic in a little olive oil, then add the tomato sauce, paprika, cayenne pepper, and vinegar. Simmer the sauce for a few minutes.
- Serve the crispy potatoes topped with the sauce and garnish with parsley.

For extra crunch, refrigerate boiled potatoes before frying. Adjust cayenne pepper based on heat preference.
