Description

Crispy fried potatoes smothered in a zesty and savory tomato sauce, perfect for those who enjoy a little heat in their meals.


Ingredients

  • 4 large potatoes
  • 2 tablespoons olive oil
  • Salt to taste
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 cup tomato sauce
  • 1 clove garlic, minced
  • 1 tablespoon vinegar
  • Fresh parsley for garnish

Instructions

  1. Peel and cut the potatoes into bite-sized cubes.
  2. Boil the potatoes in salted water until tender, about 10 minutes.
  3. Drain and let the potatoes cool completely.
  4. Heat olive oil in a frying pan over medium heat. Add the potatoes and fry until golden and crispy.
  5. In another pan, sauté garlic in a little olive oil, then add the tomato sauce, paprika, cayenne pepper, and vinegar. Simmer the sauce for a few minutes.
  6. Serve the crispy potatoes topped with the sauce and garnish with parsley.

Notes

For extra crunch, refrigerate boiled potatoes before frying. Adjust cayenne pepper based on heat preference.
