- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1 cup granulated sugar
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1 cup caramel bits
- 1 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter, brown sugar, and granulated sugar until light and fluffy. Mix in maple syrup and vanilla until smooth.
- In a separate bowl, whisk together flour, baking soda, cinnamon, ginger, cayenne, and salt. Gradually add this to the wet ingredients until just combined. Fold in caramel bits and chocolate chips.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart. Bake for 10-12 minutes or until edges are golden brown. Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Adjust cayenne pepper to taste for desired spice level. Store cookies in an airtight container for up to one week or freeze for up to three months.
