Description

A delightful dessert that beautifully combines the soft flavors of fresh pears with a rich, moist cake, perfect for fall gatherings.


Ingredients

  • 1/4 cup unsalted butter
  • 1/2 cup brown sugar
  • 2 pears, thinly sliced
  • 1 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter (for batter)
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Grease a 9-inch round cake pan.
  2. Melt 1/4 cup of unsalted butter with 1/2 cup of brown sugar over medium heat until bubbly, then pour into the cake pan and arrange the pear slices on top.
  3. In a bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg. In another bowl, cream together 1/2 cup of unsalted butter and 2/3 cup of granulated sugar until fluffy. Add eggs and vanilla, mixing well.
  4. Gradually alternate adding dry mix and milk to the wet ingredients until just combined.
  5. Spoon the batter over the pears and bake at 350°F for 35-40 minutes.
  6. Cool for 10 minutes then invert onto a serving plate.

Notes

Serve warm or at room temperature. Can be enhanced with vanilla ice cream or whipped cream.
