A delicious and wholesome casserole combining spaghetti squash, ground turkey, and melted cheese, perfect for any time of the year.

- 1 medium spaghetti squash
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes, drained
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C). Cut the spaghetti squash in half lengthwise and remove the seeds. Place the squash cut-side down on a baking sheet and roast for about 30–40 minutes, or until the flesh is tender.
- In a large skillet, heat the olive oil over medium heat. Sauté the chopped onion and minced garlic for 2–3 minutes until fragrant and translucent. Add the ground turkey, breaking it apart as it cooks, and brown for about 5–7 minutes until fully cooked.
- Stir in the chopped bell pepper, drained diced tomatoes, Italian seasoning, salt, and pepper. Allow the mixture to cook for another 5 minutes.
- Once the spaghetti squash is roasted and tender, scrape the flesh into spaghetti-like strands using a fork. Add these strands to the turkey mixture and toss everything to combine evenly. Transfer the mixture to a greased 9×13-inch baking dish. Top with the shredded mozzarella and grated Parmesan cheese. Bake for 20–25 minutes, or until the cheese is melted and bubbly. Garnish with fresh basil before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4–5 days or freeze for up to 3 months. Customize with additional vegetables as desired.
