Instructions
- In a large bowl, combine the sourdough starter and warm water. Stir in the flour, salt, sugar, and baking soda until you form a dough.
- Knead the dough for about 5 minutes until smooth.
- Cover the dough and let it rise at room temperature for about 6-12 hours, until it has doubled in size.
- Turn the dough onto a floured surface and gently deflate it. Divide the dough into equal pieces and shape them into rounds.
- Place the rounds on a cornmeal-dusted baking sheet, cover, and let them rise for another 30 minutes.
- Preheat a skillet or griddle over medium heat. Cook the muffins for about 7-10 minutes on each side, until golden brown and cooked through.
- Allow to cool on a wire rack before slicing and serving.
