Description

Soft and Sweet Linzer Cookies are a delightful treat with tender, buttery texture and sweet fruit filling, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar (for dusting)
  • Your choice of fruit jam (raspberry, apricot, or any favorite)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, salt, and cinnamon. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add the vanilla and mix until combined.
  3. Gradually add the dry mixture to the butter mixture, mixing until just combined. Gather the dough into a ball, wrap in plastic, and refrigerate for about 30 minutes.
  4. Roll out the chilled dough on a floured surface to about 1/4 inch thick. Cut out desired shapes and half with a smaller cutter for the jam window. Place on baking sheets and bake for 10-12 minutes until edges are golden. Let cool.
  5. Spread jam on solid cookie halves and top with cutout halves. Dust with powdered sugar before serving.

Notes

Store in an airtight container at room temperature for up to a week. Can also be refrigerated for extended freshness.
