- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup granulated sugar
- 1 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/4 cup powdered sugar (for dusting)
- Your choice of fruit jam (raspberry, apricot, or any favorite)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, salt, and cinnamon. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add the vanilla and mix until combined.
- Gradually add the dry mixture to the butter mixture, mixing until just combined. Gather the dough into a ball, wrap in plastic, and refrigerate for about 30 minutes.
- Roll out the chilled dough on a floured surface to about 1/4 inch thick. Cut out desired shapes and half with a smaller cutter for the jam window. Place on baking sheets and bake for 10-12 minutes until edges are golden. Let cool.
- Spread jam on solid cookie halves and top with cutout halves. Dust with powdered sugar before serving.
Notes
Store in an airtight container at room temperature for up to a week. Can also be refrigerated for extended freshness.
