Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 package (3.4 oz) pistachio pudding mix
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pistachios
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Mix in the flour, pistachio pudding mix, baking soda, and salt until well combined.
  5. Fold in the chopped pistachios and white chocolate chips.
  6. Drop rounded tablespoons of dough onto ungreased baking sheets.
  7. Bake for 9 to 11 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

Ensure butter is softened but not melted for best results. Store cooled cookies in an airtight container for up to a week or freeze for up to three months.
