Decadent cinnamon rolls infused with chocolate, peanuts, and a creamy peanut butter frosting, perfect for breakfast or any sweet craving.
Ingredients

- 3 cups cassava flour
- 3 teaspoons psyllium husk powder
- 2 tablespoons date sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 pack instant yeast (2 teaspoons)
- 1 cup warm water
- 2 cups flax milk (or other plant milk)
- 4 tablespoons coconut butter
- 1 cup date sugar
- 1 cup chocolate chips, melted with 1/4 cup coconut butter
- 2 tablespoons coconut butter
- 2 tablespoons cacao powder
- 1/2 cup peanuts, chopped
- Pinch salt
- 2.5 cups organic powdered sugar
- 1 cup natural peanut butter
- 1 teaspoon pure vanilla extract
- 1/2 cup unsweetened flax milk (or other plant milk)
- 2 tablespoons maple syrup
Instructions
- Proof the yeast by combining it with warm water for about 10 minutes until foamy.
- Mix together the dry ingredients: cassava flour, psyllium husk powder, date sugar, baking powder, baking soda, and salt.
- Add the proofed yeast and wet ingredients to the dry mix and stir until a sticky dough forms.
- Let the dough rise covered in a warm spot for 45 minutes.
- Roll the dough out into a rectangle on a floured surface.
- Spread the melted chocolate filling on top of the dough.
- Sprinkle chopped peanuts over the chocolate filling.
- Roll the dough tightly to form a log.
- Slice the rolled dough into individual rolls and place them in a greased baking dish.
- Bake at 350°F for 20-25 minutes until golden brown.
- Prepare the icing by mixing peanut butter, flax milk, maple syrup, vanilla extract, and powdered sugar until smooth.
- Drizzle the icing over the warm rolls before serving.
Notes
These rolls can be stored in an airtight container at room temperature for up to 2 days or in the refrigerator for up to a week. Freeze for longer storage.
