Ingredients

  • 1 cup cooked rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Begin by heating a large skillet over medium heat.
  2. Chop the bell peppers and add them to the skillet. Sauté for about 5 minutes until they soften.
  3. Stir in the cooked rice, black beans, corn, salsa, smoked paprika, salt, and pepper. Mix well to combine. Cook for another 5-10 minutes until everything is heated through.
  4. If desired, sprinkle the shredded cheese on top and cover the skillet until it melts. Garnish with fresh cilantro before serving.

Notes

For added protein, consider including ground turkey or chicken. Swap grains for a different texture, adjust spice levels as needed, and use vegan cheese if desired.
