Description
Smashed potatoes are a delightful twist on traditional potatoes, featuring crispy exteriors and fluffy interiors, seasoned with garlic and Parmesan cheese.

- 1 pound baby potatoes (red or Yukon Gold)
- 4 tablespoons melted butter
- 1 1/2 teaspoons minced garlic
- 1/2 teaspoon Italian seasoning
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tablespoons chopped parsley
- Cooking spray
Instructions
- Begin by boiling 1 pound of baby potatoes in a pot of salted water for 18-22 minutes until fork-tender.
- While the potatoes are boiling, preheat your oven to 425°F (220°C).
- Coat a baking sheet with cooking spray. Once the potatoes are boiled, drain them and arrange in a single layer on the baking sheet.
- Using a glass or potato masher, gently smash each potato to about half an inch thick.
- In a bowl, combine 4 tablespoons of melted butter with 1 1/2 teaspoons of minced garlic, 1/2 teaspoon of Italian seasoning, along with salt and pepper.
- Drizzle the buttery mixture generously over the smashed potatoes.
- Sprinkle 1/4 cup of grated Parmesan cheese on top and bake in the oven for 20-25 minutes until golden brown and crispy.
- Once baked, remove and garnish with 2 tablespoons of chopped parsley before serving.
Notes
Serve hot with a dollop of sour cream or extra Parmesan cheese. Pairs well with grilled meats or fresh salads.
