Description

Smashed potatoes are a delightful twist on traditional potatoes, featuring crispy exteriors and fluffy interiors, seasoned with garlic and Parmesan cheese.


Ingredients

  • 1 pound baby potatoes (red or Yukon Gold)
  • 4 tablespoons melted butter
  • 1 1/2 teaspoons minced garlic
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons chopped parsley
  • Cooking spray

Instructions

  1. Begin by boiling 1 pound of baby potatoes in a pot of salted water for 18-22 minutes until fork-tender.
  2. While the potatoes are boiling, preheat your oven to 425°F (220°C).
  3. Coat a baking sheet with cooking spray. Once the potatoes are boiled, drain them and arrange in a single layer on the baking sheet.
  4. Using a glass or potato masher, gently smash each potato to about half an inch thick.
  5. In a bowl, combine 4 tablespoons of melted butter with 1 1/2 teaspoons of minced garlic, 1/2 teaspoon of Italian seasoning, along with salt and pepper.
  6. Drizzle the buttery mixture generously over the smashed potatoes.
  7. Sprinkle 1/4 cup of grated Parmesan cheese on top and bake in the oven for 20-25 minutes until golden brown and crispy.
  8. Once baked, remove and garnish with 2 tablespoons of chopped parsley before serving.

Notes

Serve hot with a dollop of sour cream or extra Parmesan cheese. Pairs well with grilled meats or fresh salads.
