Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup creamy peanut butter
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon red pepper flakes
  • 1 cup coconut milk
  • 4 green onions, chopped
  • 1/4 cup chopped cilantro for garnish

Instructions

  1. Combine the peanut butter, soy sauce, honey, garlic, ginger, and red pepper flakes in a slow cooker. Stir until well mixed.
  2. Add the chicken thighs to the slow cooker and coat them with the sauce, ensuring each piece is well-covered.
  3. Pour the coconut milk over the chicken. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and easy to shred.
  4. Shred the chicken using two forks and mix it back into the sauce. Serve over rice and garnish with green onions and cilantro.

Notes

Serve with steamed jasmine rice and garnish with fresh herbs. Customize spice level to preference.
