A warm, creamy casserole featuring sweet potatoes, brown sugar, and spices, with optional toppings of mini marshmallows and pecans.

- 4 cups sweet potatoes, peeled and cubed
- 1/2 cup brown sugar
- 1/4 cup butter, melted
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup mini marshmallows (optional)
- 1/2 cup pecans, chopped (optional)
Instructions
- In a bowl, mix together the sweet potatoes, brown sugar, melted butter, milk, eggs, vanilla extract, cinnamon, and nutmeg until well combined.
- Transfer the mixture to a slow cooker and spread it evenly.
- Cover and cook on low for 6-8 hours or until the sweet potatoes are tender.
- If desired, top with mini marshmallows and/or chopped pecans in the last 30 minutes of cooking.
- Serve warm.

Store leftover casserole in an airtight container for up to 4 days.
