Description

A warm, creamy casserole featuring sweet potatoes, brown sugar, and spices, with optional toppings of mini marshmallows and pecans.


Ingredients

  • 4 cups sweet potatoes, peeled and cubed
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup mini marshmallows (optional)
  • 1/2 cup pecans, chopped (optional)

Instructions

  1. In a bowl, mix together the sweet potatoes, brown sugar, melted butter, milk, eggs, vanilla extract, cinnamon, and nutmeg until well combined.
  2. Transfer the mixture to a slow cooker and spread it evenly.
  3. Cover and cook on low for 6-8 hours or until the sweet potatoes are tender.
  4. If desired, top with mini marshmallows and/or chopped pecans in the last 30 minutes of cooking.
  5. Serve warm.

Notes

Store leftover casserole in an airtight container for up to 4 days.
