Description

A rich, aromatic stew infused with warm spices and dried apricots, perfect for family dinners or gatherings.


Ingredients

  • 2 lbs lamb shoulder, cut into chunks
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken or vegetable broth
  • 1 cup dried apricots, chopped
  • 1 cup chickpeas, drained and rinsed
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a pan over medium heat. Add the chopped onions and minced garlic, sautéing until softened, about 3-5 minutes.
  2. In a slow cooker, combine the lamb chunks, sautéed onions and garlic, and spices.
  3. Add the diced tomatoes and broth to the mixture.
  4. Stir in the chopped dried apricots and drained chickpeas.
  5. Season with salt and pepper to taste. Cover and cook on low for 6-8 hours, until the lamb is tender.
  6. Serve hot, garnished with fresh cilantro.

Notes

Pairs wonderfully with couscous or crusty bread. Leftovers can be stored in an airtight container for up to 3 days.
