A rich, aromatic stew infused with warm spices and dried apricots, perfect for family dinners or gatherings.
Ingredients

- 2 lbs lamb shoulder, cut into chunks
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1 can (14 oz) diced tomatoes
- 1 cup chicken or vegetable broth
- 1 cup dried apricots, chopped
- 1 cup chickpeas, drained and rinsed
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- Heat the olive oil in a pan over medium heat. Add the chopped onions and minced garlic, sautéing until softened, about 3-5 minutes.
- In a slow cooker, combine the lamb chunks, sautéed onions and garlic, and spices.
- Add the diced tomatoes and broth to the mixture.
- Stir in the chopped dried apricots and drained chickpeas.
- Season with salt and pepper to taste. Cover and cook on low for 6-8 hours, until the lamb is tender.
- Serve hot, garnished with fresh cilantro.
Notes
Pairs wonderfully with couscous or crusty bread. Leftovers can be stored in an airtight container for up to 3 days.
