Description

Ingredients

  • 2 lbs chicken breast, cut into pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 can coconut milk (14 oz)
  • 1 can diced tomatoes (14 oz)
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a slow cooker, combine chicken, onion, garlic, ginger, curry powder, turmeric, coconut milk, diced tomatoes, and chicken broth.
  2. Stir well to combine all ingredients, ensuring the chicken is coated with the spices.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. After cooking, taste and adjust seasoning with salt and pepper if needed. Serve hot, garnished with fresh cilantro.

Notes

For added thickness, you can mix a tablespoon of cornstarch with water during the last hour of cooking. Adjust spice levels by adding more curry powder or chilies.
