- 2 lbs chicken breast, cut into pieces
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp ginger, grated
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 can coconut milk (14 oz)
- 1 can diced tomatoes (14 oz)
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a slow cooker, combine chicken, onion, garlic, ginger, curry powder, turmeric, coconut milk, diced tomatoes, and chicken broth.
- Stir well to combine all ingredients, ensuring the chicken is coated with the spices.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- After cooking, taste and adjust seasoning with salt and pepper if needed. Serve hot, garnished with fresh cilantro.
Notes
For added thickness, you can mix a tablespoon of cornstarch with water during the last hour of cooking. Adjust spice levels by adding more curry powder or chilies.
