- 1 lb chicken breasts, cubed
- 1 lb andouille sausage, sliced
- 1 can (14.5 oz) diced tomatoes with juices
- 1 onion, chopped
- 2 celery stalks, chopped
- 1 bell pepper, chopped
- 4 cups chicken broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp oregano
- 2 tbsp Cajun seasoning
- 1/4 tsp cayenne pepper
- 1 cup uncooked long-grain rice
- 1 lb raw shrimp, peeled and deveined
Instructions
- Gather all ingredients and prepare by cubing the chicken, slicing sausage, and chopping vegetables.
- In a slow cooker, combine chicken, sausage, diced tomatoes, onion, celery, and bell pepper. Add chicken broth and tomato paste, and sprinkle with thyme, oregano, Cajun seasoning, and cayenne pepper. Stir well.
- Cover and cook on low for 7–8 hours or on high for 3–4 hours.
- One hour before cooking time ends, stir in uncooked rice. In the last 15 minutes, add shrimp until pink and opaque. Serve warm.
Notes
For a richer flavor, consider using quality ingredients. Feel free to add extra vegetables and adjust spice levels to taste.
