Ingredients

  • 1 lb chicken breasts, cubed
  • 1 lb andouille sausage, sliced
  • 1 can (14.5 oz) diced tomatoes with juices
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 1 bell pepper, chopped
  • 4 cups chicken broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp oregano
  • 2 tbsp Cajun seasoning
  • 1/4 tsp cayenne pepper
  • 1 cup uncooked long-grain rice
  • 1 lb raw shrimp, peeled and deveined

Instructions

  1. Gather all ingredients and prepare by cubing the chicken, slicing sausage, and chopping vegetables.
  2. In a slow cooker, combine chicken, sausage, diced tomatoes, onion, celery, and bell pepper. Add chicken broth and tomato paste, and sprinkle with thyme, oregano, Cajun seasoning, and cayenne pepper. Stir well.
  3. Cover and cook on low for 7–8 hours or on high for 3–4 hours.
  4. One hour before cooking time ends, stir in uncooked rice. In the last 15 minutes, add shrimp until pink and opaque. Serve warm.

Notes

For a richer flavor, consider using quality ingredients. Feel free to add extra vegetables and adjust spice levels to taste.
