- 2 ½ pounds beef stew meat
- 3 tablespoons olive oil
- 2 cups yellow onions (diced)
- 4 cloves garlic (minced)
- 4 cups beef broth
- 5 medium carrots (cut into chunks)
- 1 lb baby Yukon gold potatoes (halved)
- 1 cup frozen peas
- ½ teaspoon black pepper
- ½ teaspoon garlic salt
- ½ teaspoon celery salt
- ¼ cup flour
- 2 beef bouillon cubes
- 3 tablespoons tomato paste
- 2 bay leaves
- 1 sprig rosemary
- 1/4 cup cold water + 3 tablespoons cornstarch (optional)
Instructions
- Cut the beef into cubes and season generously with black pepper, garlic salt, and celery salt. Next, coat the beef with flour to help thicken the stew while it cooks.
- Heat olive oil in a skillet over medium-high heat. Brown the meat in batches to develop a rich flavor, then transfer the browned beef to the slow cooker.
- In the same skillet, sauté the diced onions and minced garlic until they turn translucent. This step releases their flavors and adds depth to the stew. Deglaze the pan with a splash of apple vinegar to lift any caramelized bits, then transfer the mixture to the slow cooker.
- Add the remaining ingredients, excluding the frozen peas, to the slow cooker. Stir everything well to ensure that the flavors meld together, and set your slow cooker to cook on low for 7½ to 8 hours or on high for 3½ to 4 hours until the beef is tender.
- In the last 15 minutes of cooking, add the frozen peas for a touch of sweetness and a pop of color.
- For a thicker stew, mix the cornstarch with cold water to make a slurry and stir it into the stew before serving. This will create a glossy, hearty texture perfect for spooning over some crusty bread.
Notes
Serve hot and garnish with fresh parsley. Pair with crusty bread, mashed potatoes, or rice. Store leftovers in an airtight container for up to 3-4 days or freeze for 3 months.
