Ingredients

  • 2 pounds beef stew meat
  • 2 large sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear the beef stew meat until browned on all sides.
  2. In the slow cooker, combine the browned beef, sweet potatoes, onion, carrots, and garlic.
  3. In a separate bowl, mix the beef broth, tomato paste, thyme, rosemary, salt, and pepper. Pour this mixture over the beef and vegetables in the slow cooker.
  4. Cover and cook on low for 6-8 hours or high for 4-5 hours until the meat is tender.
  5. Taste and adjust seasoning if necessary before serving.

Notes

Serve hot, garnished with chopped parsley. Pairs well with crusty bread or a simple green salad.
