- 2 pounds beef stew meat
- 2 large sweet potatoes, peeled and diced
- 1 onion, chopped
- 3 carrots, sliced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a skillet over medium-high heat. Sear the beef stew meat until browned on all sides.
- In the slow cooker, combine the browned beef, sweet potatoes, onion, carrots, and garlic.
- In a separate bowl, mix the beef broth, tomato paste, thyme, rosemary, salt, and pepper. Pour this mixture over the beef and vegetables in the slow cooker.
- Cover and cook on low for 6-8 hours or high for 4-5 hours until the meat is tender.
- Taste and adjust seasoning if necessary before serving.
Notes
Serve hot, garnished with chopped parsley. Pairs well with crusty bread or a simple green salad.
