- 3–4 lbs beef roast
- 1 cup cranberry juice
- 1/2 cup balsamic vinegar
- 2 tablespoons brown sugar
- 1 onion, sliced
- 4 garlic cloves, minced
- Salt and pepper to taste
- Fresh rosemary for garnish
Instructions
- Preheat your oven to 325°F (163°C). Season the beef roast generously with salt and pepper.
- In a large skillet, heat a little oil over medium-high heat. Brown the beef on all sides until golden.
- Remove the roast from the skillet and place it in a roasting pan. Sauté onions and garlic in the same skillet until fragrant.
- Add cranberry juice, balsamic vinegar, and brown sugar to the skillet. Stir well until combined.
- Pour the glaze over the roast, cover with foil, and braise in the oven for 3 to 4 hours.
- After cooking, let the roast rest for about 10 minutes before slicing.
- Garnish with fresh rosemary and serve.
Notes
For best results, use a quality cut of beef and let it rest before slicing to retain juices.
