Ingredients

  • 34 lbs beef roast
  • 1 cup cranberry juice
  • 1/2 cup balsamic vinegar
  • 2 tablespoons brown sugar
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • Salt and pepper to taste
  • Fresh rosemary for garnish

Instructions

  1. Preheat your oven to 325°F (163°C). Season the beef roast generously with salt and pepper.
  2. In a large skillet, heat a little oil over medium-high heat. Brown the beef on all sides until golden.
  3. Remove the roast from the skillet and place it in a roasting pan. Sauté onions and garlic in the same skillet until fragrant.
  4. Add cranberry juice, balsamic vinegar, and brown sugar to the skillet. Stir well until combined.
  5. Pour the glaze over the roast, cover with foil, and braise in the oven for 3 to 4 hours.
  6. After cooking, let the roast rest for about 10 minutes before slicing.
  7. Garnish with fresh rosemary and serve.

Notes

For best results, use a quality cut of beef and let it rest before slicing to retain juices.
