Ingredients

  • 250g all-purpose flour
  • 100g brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 100g unsalted butter, softened
  • 2 large eggs
  • 200ml milk
  • 150g mixed dried fruit
  • 75g chopped nuts (e.g., walnuts or almonds)
  • Zest of 1 orange
  • For decoration: marzipan, additional nuts

Instructions

  1. Preheat the oven to 175°C (350°F). Grease and flour a loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Cream the softened butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the milk and orange zest.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in the mixed dried fruit and chopped nuts.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 50-60 minutes or until a toothpick comes out clean.
  6. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack.
  7. Optionally, cover with marzipan and sprinkle additional nuts on top once cooled.

Notes

Store wrapped tightly at room temperature for up to 3 days or in the refrigerator for up to a week. For longer storage, freeze slices for up to 3 months.
