- 250g all-purpose flour
- 100g brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 100g unsalted butter, softened
- 2 large eggs
- 200ml milk
- 150g mixed dried fruit
- 75g chopped nuts (e.g., walnuts or almonds)
- Zest of 1 orange
- For decoration: marzipan, additional nuts
Instructions
- Preheat the oven to 175°C (350°F). Grease and flour a loaf pan.
- In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Cream the softened butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the milk and orange zest.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in the mixed dried fruit and chopped nuts.
- Pour the batter into the prepared pan and smooth the top. Bake for 50-60 minutes or until a toothpick comes out clean.
- Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack.
- Optionally, cover with marzipan and sprinkle additional nuts on top once cooled.
Notes
Store wrapped tightly at room temperature for up to 3 days or in the refrigerator for up to a week. For longer storage, freeze slices for up to 3 months.
