Description

Delightful muffins with rich flavors, packed with spices, dried fruits, and marzipan, perfect for springtime celebrations.


Ingredients

  • 250g all-purpose flour
  • 150g sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 100g unsalted butter, softened
  • 2 large eggs
  • 200ml milk
  • 150g mixed dried fruit
  • 50g marzipan (plus extra for topping)
  • Zest of 1 lemon
  • Zest of 1 orange

Instructions

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper cases.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  3. Cream the softened butter until light and fluffy, then add the eggs one by one, mixing well after each addition.
  4. Stir in the milk, lemon zest, and orange zest.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the mixed dried fruit and chunks of marzipan.
  6. Spoon the mixture into the prepared muffin cases, filling them about 2/3 full.
  7. Bake for 20-25 minutes until a toothpick inserted comes out clean.
  8. Allow to cool slightly, then top with additional marzipan and optionally glaze it lightly.
  9. Serve warm or at room temperature.

Notes

Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
