- 250g all-purpose flour
- 150g sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 100g unsalted butter, softened
- 2 large eggs
- 200ml milk
- 150g mixed dried fruit
- 50g marzipan (plus extra for topping)
- Zest of 1 lemon
- Zest of 1 orange
Instructions
- Preheat the oven to 180°C (350°F) and line a muffin tin with paper cases.
- In a mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- Cream the softened butter until light and fluffy, then add the eggs one by one, mixing well after each addition.
- Stir in the milk, lemon zest, and orange zest.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the mixed dried fruit and chunks of marzipan.
- Spoon the mixture into the prepared muffin cases, filling them about 2/3 full.
- Bake for 20-25 minutes until a toothpick inserted comes out clean.
- Allow to cool slightly, then top with additional marzipan and optionally glaze it lightly.
- Serve warm or at room temperature.

Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
