Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 ripe avocado, diced
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. In a bowl, toss the shrimp with olive oil, chili powder, paprika, salt, and pepper until well-coated.
  2. Heat a skillet over medium heat. Add the seasoned shrimp and cook for 2-3 minutes on each side until pink and cooked through.
  3. Combine the diced avocado, tomatoes, red onion, cilantro, and lime juice in a separate bowl to create the avocado salsa.
  4. Warm the corn tortillas in a dry skillet for about 30 seconds on each side. Assemble the tacos with shrimp and top with avocado salsa. Serve immediately.

Notes
