- 1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 8 small corn tortillas
- 1 ripe avocado, diced
- 1/2 cup diced tomatoes
- 1/4 cup chopped red onion
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- In a bowl, toss the shrimp with olive oil, chili powder, paprika, salt, and pepper until well-coated.
- Heat a skillet over medium heat. Add the seasoned shrimp and cook for 2-3 minutes on each side until pink and cooked through.
- Combine the diced avocado, tomatoes, red onion, cilantro, and lime juice in a separate bowl to create the avocado salsa.
- Warm the corn tortillas in a dry skillet for about 30 seconds on each side. Assemble the tacos with shrimp and top with avocado salsa. Serve immediately.
