Description

A delightful and easy shrimp pasta dish with garlic, lemon, and cherry tomatoes, perfect for a cozy dinner.


Ingredients

  • 8 oz spaghetti or linguine
  • 1 lb large shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 tsp red pepper flakes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • Parmesan cheese for serving

Instructions

  1. Cook the spaghetti or linguine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant.
  3. Add the shrimp, salt, and black pepper to the skillet. Cook until the shrimp is pink and cooked through, about 2-3 minutes per side. Stir in the cherry tomatoes and cook for an additional 2 minutes.
  4. Add the cooked pasta to the skillet and toss to combine. Remove from heat and stir in lemon juice and parsley. Serve warm, topped with Parmesan cheese.

Notes

Shrimp Pasta is best served immediately. Pair with a salad or garlic bread for a complete meal. Store leftovers in an airtight container for up to 3 days.
