- 2 slices of bread
- 4 eggs
- 1 can of diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
- Olive oil
Instructions
- In a skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, cooking until they become softened and translucent, about 5 minutes.
- Stir in the minced garlic, ground cumin, and paprika; cook for 1 minute to release the spices’ fragrant aroma.
- Add the canned tomatoes to the skillet and let the mixture simmer for 10 minutes. Season with salt and pepper to enhance the flavors.
- Create small wells in the tomato mixture and crack an egg into each well. Cover the skillet and cook until the eggs are set to your desired doneness. Meanwhile, toast the bread slices.
- Serve the shakshouka mixture generously over the toasted bread and garnish with fresh parsley for a pop of color and freshness.
Notes
