- 4 chicken breasts
- 1 cup Marsala wine
- 2 cups chicken broth
- 1 cup orzo pasta
- 1 cup heavy cream
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil over medium heat. Season the chicken breasts with salt and pepper. Add the chicken to the skillet, browning for 5-7 minutes per side.
- Add the diced onions and minced garlic to the skillet. Sauté for 3-4 minutes until softened. Then, add the sliced mushrooms and cook for another 3-4 minutes.
- Pour in the Marsala wine, scraping the bottom of the skillet. Let it simmer for a couple of minutes, then stir in the chicken broth and heavy cream. Bring to a gentle boil, then add the orzo pasta and return the chicken.
- Cover the skillet and reduce heat, simmering for 15-20 minutes until the orzo is cooked. Stir gently and garnish with fresh parsley before serving.
Notes
For added flavor, consider marinating the chicken in Marsala wine for an hour before cooking. This dish can also be made with shrimp or vegetables for variations.
