Description
Savory Lentil Tacos are a delightful, healthy alternative to traditional meat-based tacos, packed with flavor and nutrients.
Ingredients
Scale
- 1 cup lentils (rinsed)
- 2 cups vegetable broth or water
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Corn or flour tortillas
- Toppings (e.g., avocado, salsa, cilantro)
Instructions
- Combine lentils and vegetable broth in a pot. Bring to a boil, then reduce heat and simmer until lentils are tender, about 20-25 minutes.
- Heat a little oil in a skillet over medium heat. Add the diced onion and garlic, sautéing until softened and fragrant, about 3-4 minutes.
- Stir in the cumin, chili powder, smoked paprika, salt, and pepper. Add the cooked lentils and mix well to combine all the flavors.
- Warm tortillas in a separate pan or microwave. Assemble tacos by filling the tortillas with the lentil mixture and your choice of toppings. Serve and enjoy!
Notes
Consider using corn tortillas for a gluten-free option and feel free to adjust the spices to suit your taste.
