Description

A delightful Italian-American dish featuring tender chicken breasts simmered in a luscious mushroom sauce made with Marsala wine.


Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 4 tablespoons olive oil
  • 8 ounces mushrooms, sliced
  • 3/4 cup Marsala wine
  • 1 cup chicken broth
  • 2 tablespoons unsalted butter
  • Chopped fresh parsley for garnish

Instructions

  1. Season the chicken breasts with salt and pepper. Dredge each breast in flour, shaking off the excess.
  2. Heat the olive oil in a large skillet over medium-high heat. Cook the chicken until golden brown on both sides, about 4-5 minutes per side.
  3. Remove the chicken and set it aside to keep warm.
  4. Add the sliced mushrooms to the skillet and cook until browned, about 5 minutes.
  5. Pour in the Marsala wine, scraping up any browned bits from the bottom of the pan. Cook for 2 minutes to reduce slightly.
  6. Add the chicken broth to the skillet and return the chicken to the pan. Simmer for an additional 10 minutes.
  7. Remove the chicken again and stir in the butter until melted.
  8. Serve the chicken topped with the mushroom sauce, garnished with fresh parsley.

Notes

Serve with pasta, crusty bread, or a side salad for a complete meal.
