Description
A delightful Italian-American dish featuring tender chicken breasts simmered in a luscious mushroom sauce made with Marsala wine.

- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 4 tablespoons olive oil
- 8 ounces mushrooms, sliced
- 3/4 cup Marsala wine
- 1 cup chicken broth
- 2 tablespoons unsalted butter
- Chopped fresh parsley for garnish
Instructions
- Season the chicken breasts with salt and pepper. Dredge each breast in flour, shaking off the excess.
- Heat the olive oil in a large skillet over medium-high heat. Cook the chicken until golden brown on both sides, about 4-5 minutes per side.
- Remove the chicken and set it aside to keep warm.
- Add the sliced mushrooms to the skillet and cook until browned, about 5 minutes.
- Pour in the Marsala wine, scraping up any browned bits from the bottom of the pan. Cook for 2 minutes to reduce slightly.
- Add the chicken broth to the skillet and return the chicken to the pan. Simmer for an additional 10 minutes.
- Remove the chicken again and stir in the butter until melted.
- Serve the chicken topped with the mushroom sauce, garnished with fresh parsley.
Notes
Serve with pasta, crusty bread, or a side salad for a complete meal.
