- 1 lb sausage
- 1 package three-cheese tortellini
- 2 cups fresh spinach
- 1 sweet potato, diced
- 2 cloves garlic, minced
- 4 cups broth (chicken or vegetable)
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large pot, cook the sausage over medium heat until browned.
- Add the minced garlic and diced sweet potato. Cook for a few minutes until the sweet potato softens.
- Pour in the broth and bring it to a boil.
- Add the tortellini and cook according to package instructions.
- Stir in the spinach and heavy cream. Cook until the spinach has wilted.
- Season with salt and pepper to taste.
- Serve warm.
Notes
Can add grated cheese on top for extra flavor. Best served with crusty bread or salad.
