Description

A warm and comforting soup featuring sausage, tortellini, and nutritious spinach in a creamy broth, perfect for busy weeknights or chilly days.


Ingredients

  • 1 lb sausage
  • 1 package three-cheese tortellini
  • 2 cups fresh spinach
  • 1 sweet potato, diced
  • 2 cloves garlic, minced
  • 4 cups broth (chicken or vegetable)
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the sausage over medium heat until browned.
  2. Add the minced garlic and diced sweet potato. Cook for a few minutes until the sweet potato softens.
  3. Pour in the broth and bring it to a boil.
  4. Add the tortellini and cook according to package instructions.
  5. Stir in the spinach and heavy cream. Cook until the spinach has wilted.
  6. Season with salt and pepper to taste.
  7. Serve warm.

Notes

Can add grated cheese on top for extra flavor. Best served with crusty bread or salad.
