Ingredients
- Active sourdough starter
- Filtered water
- Bread flour
- Salt
- Roasted garlic (1 head)
- Olive oil
- Fresh rosemary (1 tablespoon)
- Cheese (optional: Asiago or Gruyere)
Instructions
- Begin by preparing the roasted garlic. Wrap a head of garlic in foil and place it in a preheated oven at 400°F (200°C) for about 30 minutes until it becomes soft. After baking, allow the garlic to cool slightly, then squeeze out the cloves and set aside.
- In a large mixing bowl, combine your active sourdough starter with filtered water, stirring until well dissolved. Gradually mix in the bread flour and salt. Continue to mix until there are no dry bits of flour remaining.
- Gently fold in the roasted garlic, olive oil, fresh rosemary, and cheese if you’re using it. This step infuses the bread with flavors that will come through beautifully after baking.
- On a floured surface, knead the dough for about 5 minutes until it’s smooth and elastic. Shape it into a ball and transfer it to a lightly floured bowl. Cover with a damp cloth and let it rise at room temperature for 12 hours, or until it has roughly doubled in size.
- After the dough has risen, transfer it to a floured surface and gently shape it into a round loaf. Allow it to rest for an additional hour, covered with a cloth.
- Preheat your oven to 450°F (230°C). Once preheated, place the bread in the oven and bake for 30 to 35 minutes, or until the crust is a lovely golden brown and sounds hollow when tapped.
Notes
For a beautiful crust, consider adding a pan of water to the oven to create steam as it bakes. Adjust the amount of garlic based on your preference.
